Who ever said “good things comes in small packages” was spot on.  Especially when it comes to these dainty but very scrumptious Mini Oreo Cheesecakes.  I love-making cheesecakes at any time but these “bake in a muffin tin “mini” versions are a sheer delight to make.

You get all the flavor and deliciousness of a regular baked cheesecake but instead of taking a couple of hours to bake these mini cheesecakes are baked in less than 20 mins!!  Yes, you read that right 20 minutes.  Ok,  I admit there is a downside, you still must let them set for about 2 hours in the fridge or even better overnight.  That’s always the hardest part the “waiting” time  but I promise you these mini oreo cheesecakes are most definitely worth the wait.

Like a normal cheesecake, you begin with a biscuit crust but instead of using digestives, we are making a delicious chocolaty Oreo crust.  Line a normal muffin tin with some muffin/cupcake cases and press a couple of teaspoons of crust into each case.  Bake these for about 5 minutes.  The filling which is made with  Philadelphia Cream Cheese   is a simple vanilla cream cheesecake with added oreos.  I use an ice cream/cookie scoop to put the filling in ( cause it makes life easier ).   Fill each cupcake case up to the top, these won’t rise so no worries about overflowing cheesecake!   These bake for about 20 mins.  The crowning glory – fresh whipped cream topped with an oreo.

Now mine had a few cracks on top and a few did sink a little but the whipped cream hid all that.

Next time I make think I’ll try using a “water bath” like you would use for a normal baked cheesecake. Nothing too difficult, I promise.  Just place the muffin tin inside a deep roasting dish and fill with water  half way up the muffin tin.  This should prevent cracks appearing, but if you don’t mind a few imperfections then don’t bother with that,  sure nothing’s perfect in this world.

When it comes to make any kind of cheesecake I stick by three rules:-

Always have your ingredients at room temperature

Use the best cream cheese available to you, I always use Philadelphia Cream Cheese.

Never use low-fat cream cheese.   I find these never make a great cheesecake

I used the new Oreo thin biscuits here as they were on a special offer in my local supermarket but normal oreos (not the double stuffed) will do just fine.

If you didn’t want the fuss of making an oreo crust you could just use an oreo cookie as the crust.  I’ve seen this done on Pinterest and it looks cool.  I think I’ll  try this the next time I make these mini oreo cheesecakes., which will be absolutely sooner rather than later.
