  • 150 g caster sugar
  • 200 g self raising flour
  • 1/4 tsp baking power
  • 1 large egg
  • 1/4 tsp cinammon
  • 1/4 tsp ground nutmeg/mixed spice
  • 1 tsp vanilla extract
  • 60 ml vegetable oil
  • 180 ml milk

  • 170 g brown sugar
  • 3 tbsp melted butter
  • 1 tsp cinnamon

  • 55 g 2oz cream cheese, softened
  • 100 g icing sugar
  • 1 tablespoon milk
  • dash of vanilla

  1. Preheat oven to180c /350F. Line a regular muffin or cupcake  tin with some paper cases.
  2. In a large bowl, gently whisk together the sugar and egg and vanilla extract

  3. Sieve together the flour, baking powder and spices

  4. Add the flour mix to your wet ingredients and whisk until batter is smooth.

  5. Fill each muffin cup to about 1/3 full. Don't over fill the cases!

  6. In a small bowl, mix the  melted butter, cinnamon and brown sugar. The mixture should have the consistency of something like thick pouring cream… pour this into an icing bag and cut tip

  7. Add a small swirl of filling mixture into each muffin case

  8. Fill the cases with the remaining batter until cases 2/3 full & make a cinnamon spiral on top of each muffin ( the icing bag will make this much easier) If not then drizzle from a spoon, heat the filling in the microwave again if I gets to thick

  9. Bake for about 25 minutes until muffins are risen and golden and knife inserted into the middle comes out clean. Let muffins cool in baking pan.

  10. While muffins are cooling, make the cream cheese frosting by whisking together all the frosting ingredients. Drizzle over the top of the cooled muffins.
  11. Makes about 10-12

Looks like a lovely recipe. We do not get MIXED SPICE here in Canada so what would you suggest as an alternative ? Some people think that our ALLSPICE is the same but it is not. Allspice is a spice by itself.

    • Karyn August 28, 2018 at 8:50 pm

Thank you Ina .Home made Mixed spice is easy to make and just keep it in a sealed jar will last for about 6 months Here is a typical blend of spices used to make mixed spice:
      1 Tbs ground allspice
      1 Tbs ground cinnamon
      1 Tbs ground nutmeg
      2 tsp ground mace
      1 tsp ground cloves
      1 tsp ground coriander
      1 tsp ground Ginger
Blend all spices together, and store in a sealed jar away from light. x
