It’s the last Bank Holiday of the Summer – and yet again the grey clouds have been looming all day!!

We did have plans for a family drive up to Cavan Lakes, but by the time  everyone (the kids) fell out of bed and got breakfast it was late afternoon. They were up late into the night playing Mario Cart on the Wii of all things. My eldest son found the “lost”console down the back of his wardrobe when he finally got around to cleaning his room!  This so-called “lost'” games console has been missing for 2 years, and  has been the subject of many arguments between my boys over who was responsible. I even got the blame at one stage.

Since the trip wasn’t happening, my hubbie decided to do some DIY, the boys are back on the Wii (there’s a championship at stake), my daughter Amy and I headed to the kitchen to bake.  Amy was trying out a new stir fry recipe for dinner so I decided to make some M&M’s Chocolate Fudgy Squares for dessert or “afters” as we call it.

These fudgy chocolate squares are made with oats and everybody’s favorite M&M’s.  Now I have tried these out with Smarties but I find the colour fades on the smarties when you bake with them  – so I always use M&M’s  when I’m baking cookies are squares like these.

These super easy oat squares take less than 10 mins to put together, (no mixer required) and 25mins in the oven. The hardest part is waiting for them to cool to cut them up, but I promise you they are worth the wait!

M&M's CHOCOLATE FUDGY SQUARES

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Calories per serving: 200 Calories

M&M's CHOCOLATE FUDGY SQUARES

A delicious "any time of day treat" made with everyone's favorite M&M's

Ingredients

  • 135g oats
  • 360g plain flour
  • 200g brown sugar
  • 1 tsp. salt
  • 230g soft butter
  • 1 14 oz. can sweetened condensed milk
  • 1 bag milk chocolate chips 120g
  • 2 TB butter softened
  • 1 large bag M&Ms approx. 150g – 200g

Instructions

  • Preheat oven to 180c/350f
  • In a large bowl, mix oats, flour, brown sugar, salt and butter with a spoon. Remove about 1/3 of the mix and set aside.in a bowl or plate
  • Press the remaining mixture into the bottom of a greased 8" square tin
  • In a small pot, melt condensed milk, chocolate chips and 2 tablespoons of butter over low-medium heat. Stir constantly until chips are melted and everything is mixed well. (Be gentle)
  • Pour this chocolate chip & condensed milk mixture over the bottom layer and spread evenly. Sprinkle leftover cup of oat mixture over the chocolate.
  • Top with M&Ms and bake for 20-25 minutes. Let cool completely before cutting
