“Deck the Halls with Boughs of Holly” – gosh it’s hard to believe it is nearly one week to Christmas!!

It seems like Halloween was only last week .   I had big plans to have everything done and dusted by now, but true to form I am still shopping for presents.  I’m finding it so difficult to come up with good ideas for my 4 kids.  The older they get the worse it is. I hate giving gift vouchers but it’s looking like that’s the way I’m headed this year. I really miss having Santa in the house – so I still try and make it as magic as possible.

One tradition I have not given up on is giving edible presents for Christmas. This year it will be my old reliable Ferrero Rocher Gateau but I am also including a new one into the mix – A Guinness Gingerbread Bundt.  When I did a trial run of this of this delicious cake it was a huge hit and looks beautiful when it’s decorated.

It is a very easy bake , takes about 45 mins to bake. I finish it off with a ginger beer glaze for that extra hint of spice.  It’s delicious served with ice-cream or warm custard.

I used a Nordic Heritage Bundt tin but you could use any other bundt tin.  I got my bundt tin in the Christmas sales last year. I think it was TkMaxx – a great shop for finding baking treasures

A quick tip  I always spray the bundt tin with a baking spray and then dust it with flour, the cake always comes out very easy.

Guinness Gingerbread Bundt

This classic gingerbread Bundt cake is made extra delicious by adding Guinness Stout. It's finished off with a ginger ale glaze. Definitely a showstopper

INGREDIENTS

  • 100 g treacle
  • 75 g golden syrup or you can use all treacle
  • 320 g plain flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 175 g soft butter
  • 300 g soft brown sugar
  • 2 eggs
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 2 tsp ginger
  • 1/4 tsp mixed spice
  • 250 ml Guinness Stout

Glaze:

  • 310 g icing sugar sugar
  • 65 ml ginger ale
  • 1 1/4 tsp ground ginger

INSTRUCTIONS

  1. Preheat oven to 180c/350 degrees.
  2. Spray a 10 cup Bundt pan ( this is a normal size bundt tin such as Nordic ware bundt tin) with baking spray and dust with flour, shake excess flour out

  3. Using an electric mixer , beat together the butter and brown sugar until soft and fluffy.

  4. Add the eggs, one at a time, and beat gently until well incorporated.
  5. Stir in the treacle and golden syrup, make sure you stop your mixer and scrape down the sides.
  6. In a smaller bowl, whisk together the flour, baking soda, baking powder, salt, ginger, cinnamon, and mixed spices
  7. Stir 1/2 of the flour mixture into the large bowl.= then add add 1/2 of the Guinness into the bowl.
  8. Add the remaining flour and Guinness Mix just until smooth.
  9. Pour batter into the prepared bundt pan. Tap on the counter to remove air bubbles.
  10. Place in the oven and bake for 55 to 65 minutes, until a skewer inserted into the center of the cake comes out clean.
  11. Remove from oven and allow cake to cool for up to 10 minutes in the pan.
  12. While the Gingerbread is cool, mix the glaze ingredients together
  13. Place icing sugar in a medium bowl. Using a fork, gently mix in the ground ginger. Slowly mix in the ginger ale until the icing reaches the consistency you would like for drizzling over the cake. Using a large spoon, drizzle the icing along the top of the cake.

  14. Flip Gingerbread out onto a wire cooling rack and place over a large plate. Drizzle the glaze over the warm cake.
  15. Serve Gingerbread warm or cold with a dollop of fresh whipped cream or custard
