Bourbon-biscuit brownies

 

Well it’s here at last the brand new season of Game Of Thrones!!  Season 7  – Episode 1  debuts tonight .  Yes it’s definitely going to be a late one BUT so worth it.

My daughter Amy & I have been binge watching S1-6 over the past month in preparation for tonight’s premier which is on at 2AM our time. We’re #teamdani all the way.

A very delicious mid-night feast is on the cards so I’ll be baking the chocolate goodies and our Amy is making her special Game of Throne’s  cocktail.  On the menu tonight is Home-made Pizza, Chocolate Popcorn Cupcakes ( you can find that Recipe HERE) and Chocolate Popcorn Brownies, which brings me back to my post.

I made these really delicious Bourbon-Biscuit Brownies a few weeks ago. They were an experiment that work out really well. I had no chocolate chips to put in my usual brownies   but what I did have was a packet of chocolate bourbon-biscuits which I crumbled up and chucked into the batter

Bourbon Biscuits are hugely popular in this part of the world, they’re a typically British biscuit right up there with the beloved custard cream.  In our house the Bourbon-Biscuit is the king and you will always find a packet in the biscuit tin.

This is a very simple  brownie recipe, no mixer required just a wooden spoon!

I crumble up 1/2 the biscuits and stir them into the brownie batter.  The other half –  I leave whole and press into the top of the batter before it goes into the oven.  The biscuits make the chocolate brownie even more chocolaty and also lend a little biscuit crunch to the rich squidgy brownie.  It’s a win-win situation.

BOURBON-BISCUIT BROWNIES

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

BOURBON-BISCUIT BROWNIES

A very delicious brownie, made extra special with the addition of crumbled BOurbon Biscuits

Ingredients

  • 350 g chocolate (all milk, dark or a mixture of both whatever you prefer)
  • 250 g unsalted butter
  • 3 eggs
  • 250 g light brown sugar
  • 100 g plain flour
  • 1 tsp baking powder
  • 10 Bourbon Biscuits

Instructions

  • Heat the oven to 180C/350F & Lightly grease a 22cm square cake tin.
  • Melt the chocolate and butter in a heatproof bowl set over a pan of simmering water.
  • Whisk the eggs and sugar together for 2-3 minutes until fluffy.
  • Fold the chocolate mixture very gently into the egg mixture.
  • Sieve the flour and baking powder into the mixture and stir to mix. Break apart the bourbon biscuits and leave the tops to one side. break the remaining biscuits into small pieces NOT CRUMBS and stir these into the batter.
  • Pour the mixture into the cake tin. Place the tops of the biscuits into the batter & press down gently.
  • Place on the middle shelf of the oven and bake for 30 minutes for a gooey brownie or 40 mins for a firmer brownie Remove from the oven. Allow to cool completely in the tin.

    I found a box of chocolate Bourbon biscuits for $9.89 on Amazon. A bit expensive, but I think I’ll order them to try these brownies. Hope they’re delicious!

    I think Hubby and I are the only 2 people on this planet who have absolutely no clue what Game of Thrones is about! That being said, we are familiar with great looking brownies and you have that recipe. Will have to give it a try.

    As a kid grew up eating Bourbon Biscuits. Never thought one can make brownies with it. Nice idea.

      Hi Val..yes I think there an Irish and Uk biscuit..you could try an Oreo that has a a chocolate cream that might work😀

    Oh, I totally get the excitement for the new game of thrones season and we actually made a dessert to watch the premiere with my girlfriends 🙂 These brownies look so good and I do have these bourbon biscuits, so will try soon.

    My close group of friends are SO into Game of Thrones! I haven’t really joined the fray, but I’ve seen bits and pieces with them. These brownies look so good, as do your Bourbon biscuits. I’ve never heard of them before!

      Hi Karyl 😉 My son is the same.. He can’t understand what all the hype is about. I think the nearest you would have would be a chocolate Oreo. Any biscuit in a brownie is yum!!

        I was in Canada a couple weeks ago and saw these Bourbon biscuits in the store! I thought about buying them, but then realized I would eat the whole thing by myself, so I exercised a little self control 🙂

    OMG I remember eating those delicious bourbon cookies. I wonder if I can still find them here. Hubby is a HUGE Game of Thrones fan….and a chocolate fanatic (loves bourbon too). Guess this is WIN WIN WIN for him…maybe I should be the “Good Wife” and make him some.

      Hi Gloria.. I think there Bourbon Biscuits very hard to find unless maybe if you had a store near you that sold English or Irish products you might find them.. have to send my brother some in Boston every Christmas lol

    Now, here’s a recipe that combines two of my favorite – brownies + bourbon biscuits !!! I always have bourbon biscuits stocked at home and will have to try this deliciousness soon 🙂
